Don’t Throw Out the Seeds!!
Getting your jack-o-lanterns done for Halloween? Be sure not to throw out the tasty treat waiting for you inside your pumpkin…the seeds! Loaded with zinc, oleic acid (a good fat), protein, fiber, tryptophan, B-complex vitamins and essential minerals, they are just too good for you to throw away. Turning them into a tasty treat is super easy:
- Separate the seeds from the ‘goo’ inside the pumpkin, give them a quick rinse in a colander and lay out on a tea towel or paper towels to dry.
- Put in a big bowl and toss with a bit of olive oil and sea salt (or any other flavours that you like….. garlic powder, Parmesan cheese, cayenne or chillies, cumin or herbs are all great ideas to try as well).
- Spread out on a cookie sheet and bake at 325 degrees for about 25 minutes. You’ll want to stir them every 5 or 10 minutes to get them evenly golden and make sure that they don’t burn.
- Try and keep them in the house for more than 10 minutes when they are done…once your family tastes them they’ll go quick!
